Roasted Tomatillo Avocado Salsa

We're big fans of avocado over here - could pretty much eat it everyday (and usually do!). I decided to spice things up the other night and whip up some delish avocado salsa and it turned out so amazing, I thought I'd share. To be honest, if you're feeling lazy, you could easily cut up the avocado and mix into into pre-made salsa but ya know, homemade is always the best because you know what's actually in there. Easy peasy directions are down below!


INGREDIENTS:

  • 5 Tomatillos
  • 1 Jalapeno Pepper (+more if you like it spicy)
  • 1 Garlic Clove
  • 1/2 Cup of Cilantro
  • 1 Large Avocado
  • 1 Lime
HOW TO:


  • Roast tomatillos and pepper on grill or stovetop
  • Put tomatillos, peppers (sans seeds if you want more mild), garlic & cilantro in blender or food processor 
  • Dice avocado into large chunks and stir into salsa
  • Squeeze fresh lime juice over your chips + enjoy!
